 Spicy Masala Chicken Tikka Biryani

Ingredients:-

For Chicken tikka Marination:-

  • Chicken 1kg
  • Garam Masala
  • Lemon juice 1Tbsp
  • Red food color 1/4Tbsp
  • Kashmiri Lal Mirchi 1Tbsp
  • Chat masala 1Tbsp
  • Turmeric 1/2 Tbsp
  • Salt as required
  • Red Chilli powder 1Tbsp
For Gravy/Korma:-
  • Chat masala 1 1/2 Tbsp
  • Red chili powder 1 1/2 Tbsp
  • Garam masala 1 1/2 Tbsp
  • Turmeric 1Tbsp
  • Salt as per taste
  • Whole Green Chilli 10-12
  • Coriander chopped handful
  • Mint chopped Handful
  • Fried Onion (5-6 medium size and 4-5 big size)
  • Crushed fried Onion 1cup
  • Aloo Bhukara dry 10-15
  • Essence of biryani few drops
  • Yogurt 1cup
  • Green Chili Paste 1 1/2 Tbsp
  • Ginger paste 1 1/2 Tbsp
  • Garlic Paste 1Tbsp
  • Chopped Tomatoes 4-5 medium
  • Zerra ( cumin ) 1Tbsp
  • Oil 
For Rice:-
  • Basmati rice 1kg
  • Zeera(cumin seeds)
  • Bay leaves 
  • Clove
  • Black pepper whole
  • Salt
  • Black Cardamom

Method:-

For Chicken tikka Marination:-

  • Take a bowl and add chicken.
  • Add garam masala, Lemon juice, Red food color, Kashmiri Lal Mirchi, Chat masala, Turmeric, Salt, Red chili powder and mix all together well and leave it for 30 mins to 1 hour.
  • Take a pan, add oil.
  •  Add marinated chicken and cook from both sides.
  • When cooked keep it aside.
For Gravy/Korma:-
  • Take a pan, add oil.
  • Once the oil is heated add cumin seeds
  • Add tomatoes and cooked them well.
  • Add green chili paste, ginger, and garlic paste, Red chili powder, Salt, Turmeric, Gram masala, chat masala, aloo bhukara, crushed fried onion mix it well.
  • Add a bit of water 
  • Add yogurt and mix well
  • When cooked keep it aside.
For Rice:-
  • Take basmati rice wash it and socked it for 1 hour.
  • Take a pot and heat oil
  • Add salt, zeera, bay leaves, cloves, black pepper, Black Cardamom
  • Boil water nicely
  • Add rice and cook it 
  • Don't cook full, strain it when it is half cooked (leaving it uncooked 3/4, we will cook it completely when we will give it dum)
For Layer of Biryani:-
  • Take a pot, apply oil on the base and sides
  • Put a layer of rice.
  • Pour gravy/korma on top of rice.
  • Place Chicken tikka on top of it.
  • Add fried onion, Green chilis, coriander, mint leaves.
  • Then again put a layer of rice.
  • Add red food color mixed with water on the top of rice.
  • Add fried onion, coriander, mint leaves oil and few drops of the essence.
  • Cover it with aluminum foil, place lead.
  • Place a tawa on flame and put the pot on it and leave it for 10-15 min for dum.
  • Biryani is ready.
  • Serve it with salad and raita.
