Baingan ka Bhartha


Ingredients:-

  • Baingan big sized 1 kg
  • Oil 1 cup
  • Tomato chopped 1 cup
  • Spring onion 1/2kg chopped
  • Turmeric 1tsp
  • Red chili 1tsp
  • Ginger and Garlic paste 1tsp
  • Cumin seeds 1tsp
  • Kalonji 1tsp
  • Salt as per taste 
  • Garm Masala 1tsp
  • Green Chili 6-8
  • Coriander Handful
Method:-
  • Roast Baingan Nicely Till their skin burn
  • Keep it aside for 1 min and then peel its skin when it is hot
  • Then cut it and mix it well.
  • Keep it aside.
  • Take a pan and add oil
  • Heat oil nicely and Add cumin seeds and kalonji to it.
  • Then add Chopped Tomatoes and let them cook for a few minutes.
  • Add Garam masala, Turmeric, Red chili, Salt, Ginger garlic paste and mix it well
  • Then add Baingan to it and mix it well.
  • Add spring onion and mix all together
  • Cover and cook for 4-5 mins
  • Mix well and add green chilis to it and cover it for 2 mins on low flame
  • At last add coriander on top
  • Serve it with Chapati or Bajre ki Roti, Salad.
Tip:-
  • Peel the skin of baingan when it is hot, otherwise,
    you are not able to peel it when it will get cold.
